A comforting carrot cake

Ingredients

  • 1 cup coconut flour

  • 1/4 tsp. baking powder

  • 1 tbsp. ground cinnamon

  • 1/4 tsp. ground nutmeg

  • 2 tbsp. honey

  • 1/4 cup melted coconut oil

  • 6 beaten eggs

  • 1 and a half cups of grated carrots

  • 1/2 cup raisins

  • Chopped walnuts to decorate

Instructions

  1. Mix together dry ingredients, flour, cinammon, nutmeg, baking soda.

  2. Combine wet ingredients and add to dry ingredients

  3. Stir in raisins

  4. Add mixture to a greased cake tin.

  5. Top with walnuts

  6. Cook for 50 minutes at 180 degrees.

  7. Set aside and allow to cool.
