Protein energy balls

Makes around 10

Ingredients

  • 250g dates

  • 1/4 cup nut butter of choice

  • 1/2 cup flax seeds

  • 1/2 cup of dessicated coconut

  • 1/3 cup sesame seeds

  • 1/2 cup pumpkins seeds

  • 1/4 cup cacao powder

  • 1/4 cup water or nut milk

Directions 

  1. Blend everything together until roughly broken down.

  2. Form into medium size balls and coat in some more dessicated coconut.

  3. Place in fridge for 30 mins to set.

  4. Enjoy!

Festive cranberry, chocolate chip biscuits

Easy to make - chewy, festive, gluten free, grain free biscuits

Ingredients

  • 180g almond flour

  • 3 tbsp. dessicated coconut

  • 1/2 tsp. allspice

  • 1 egg (or 1 tbsp. chia seeds)

  • 12 mejool dates

  • Dried cranberries

  • 80%+ dark chocolate chopped up into rough chips

  • Splash of nut milk

Directions 

  1. Blend everything except the chocolate and cranberries together until a dough is formed.

  2. Stir in chocolate chips and cranberries.

  3. Take approximately 2 tbsp. and divide into rough biscuits on a greased baking tray. Press down with a fork to flatten into shape.

  4. Cook for approimately 20 minutes at 180 degrees.

  5. Enjoy!

Pico de gallo

A tangy fresh Mexican style salsa bursting with flavour.  Great served with some fish/meat or corn chips.

Ingredients

  • 1 big red onion

  • 1 ripe avocado

  • The juice of a fresh lime

  • 6 juicy tomatoes

  • Big handful of coriander

  • 1 small crushed garlic clove

  • Red chilli or chill flakes - to taste

  • Salt and pepper

Directions 

  1. Chop all the ingredients.

  2. Add lime juice and garlic

  3. Add seasoning

  4. Mix well

  5. Enjoy
